    10 points for Brad pointing out that sharp knives safer than dull, I have that argument so many times. People like "ahh if it's too sharp I'll cut myself" I'm like "if it's blunt you'll slip and cut yourself!!"

    Garlic, smash, slice, then using the edge of the knife, bend it into the garlic to smash/cut the garlic into a mince. Unfortunately you will lose oil into the board this way... But who cares, its a speed test.

    Actually, in Chinese cuisine, a lot of the time knife skill and shape of the food is a big deal. I've seen some really insane ones that blow me away
